Tomorrow Dave and I celebrate 6 years of marriage! The traditional sixth anniversary gift is sweets, so we are taking the boys to Hershey, PA to surround ourselves with chocolate. Yum.
To get excited for the indulgent weekend, for about two months we’ve been eating only two sweets per week: one on a week day, and one after Sunday dinner. I’ve had a lot of fun making sure our much anticipated desserts have been awesome. This little treat is as easy as can be, and so fun to make and eat! They would be perfect to whip up for a dinner party, or deliver to a neighbor as an alternative to a regular plate of cookies.
To make them you’ll need:
Parchment paper, an ice cream scoop, very slightly softened ice cream, and cookies (if they are homemade let them cool completely!)
Simply lay out two cookies on a piece of parchment, scoop some ice cream onto one cookie, top with the second, roll up in the parchment being careful not to smash all of the ice cream out, fold the sides in like a present, then tuck them under the sandwich and place back in the freezer to harden up. In an hour or so you’ll have delightful cookies and ice cream sandwiches to enjoy.
