Last night we partied like it was mil novecientos noventa nueve!! The Coils, a fellow law family, have hosted a big Mexican Potluck every year that they’ve been here in Concord (this is their last, and Dave and I feel like we may have to carry on the tradition in their absence!) La comida was increíble!! Most of the LDS law families are from the West and feel the lack of good mexican food around here. The dishes included several pulled meats (pork, chicken, beef), tostadas, Mexican salad, salsa, cilantro lime rice, guacamole, seven layer dip, refried and black beans, quesadillas, piña coladas, fresh limonada and fried ice cream and Mexican oatmeal cake for dessert!
The house was full of families (and their darling children). The whole night was a huge success and we had so much fun!All three of the Andersons went to bed FULLy satisfied!
