Easiest Virgin Piña Colada Recipe Ever
Do you want to be instantly transported to a tropical island with just one sip? Then you are going to love the easiest piña colada recipe ever. Two ingredients, plus ice, blend and you’re set!
In 2007, my husband and I spent the summer months living in Old San Juan, Puerto Rico. We loved the people, beaches, tropical rainforest, bioluminescent bay, and the piña coladas! Not only did we love ordering and drinking them, we watched and learned how they were made in roadside stands (which, of course, is the most authentic you can get, right?)
Over and over we were mystified that the virgin piña coladas were blended up in about 2 minutes with just 2 ingredients: pineapple juice and coconut cream. That’s it!
Growing up, my dad would occasionally bring home a bottle of “Piña Colada” mixer for a special party or barbeque. The unnaturally white liquid always tasted sickly sweet and reminded me more of a carnival than a Caribbean beach. No wonder my reaction to an authentic, Puerto Rican Piña Colada was surprise and delight. It tasted fresh, light, and natural. So delicious!
Let’s Get Started!
To make the easiest virgin piña colada ever you’ll just need three things:
- 100% Pineapple juice
- 100% Coconut Cream
- Ice
*Maraschino cherries optional, but not necessary!
Ingredient Notes
I have made this recipe with all different brands of juice and cream, and as long as they’re natural, they all taste amazing. The pineapple juice often comes in a large, 1000mL aluminum can or box, and can be found easily at most regular grocery stores. If you don’t see it at your regular store, you are guaranteed to find some at a local Latin market.
The Coconut cream comes in a regular 8oz aluminum can. There are both reduced and full fat options. I always go for the full fat because it is creamier and more delicious. Either work. Note that the recipe calls for coconut CREAM, not coconut MILK. Coconut cream has more fat, is often mostly solid in the can (like the consistency of soft wax?) and that depth makes the finished creaminess of the blended drink so nice.
Warning: this recipe is so simple it will become your go-to blended drink for festive meals. It is easy to make for a crowd, just pour the blended drink into pitchers. Enjoy before the ice melts.
