Have you grabbed some figs yet this year? Their short early-fall season is upon us and I can’t seem to pass them up. This week I followed Ina Garten’s advice and cut them in half (stems removed) wrapped them in 1″ slices of prosciutto baked them, cut side up, at 425 for 10 minutes. Uh-mazing. The meat was slightly crisp, the fruit just warmed. The balance of sweet and savory was delicate. I want to have a party in September next year, just to serve these:)
Other foodstuffs we enjoyed this week were:
Quinoa and Apple Salad with Curry dressing. This was a great, simple dish. I used dried cranberries instead of currants, and it was great. We all maybe ate far more than we should have!
Lemon Pepper Sole and grilled broccoli over thick potato soup. I grilled, rather than baked the fish, then I threw some chopped broccoli in the pan with the remaining seasoning and butter. Crunched for time, I blended the boiled red potatoes instead of mashing them, because they were ever so slightly underdone. After adding a little milk the final scoop of cream cheese left in the tub, the result was a super smooth thick potato soup. I warned Dave it might be weird, but that soup topped with grilled fish and broccoli was awesome! I’ll plan on the soup next time!
Our other meals were quickies from Trader Joe’s. Veggie Masala over rice (using TJ’s masala simmer sauce) one night and frozen pizza from TJ’s another night (I ate mine at 10 pm after returning home from a late night of screen printing:)
Tonight we’ll be dropping the boys off with a friend and heading out on a date. Although I’d love to go back to Cheesetique, we will be heading south to do some shopping before dinner, so we may end up at the at Wegman’s Seafood Bar (or with a Costco hotdog:)!
