I have been spoiled blessed.
It has been almost a whole month since I have cooked on my own for my family. Don’t get me wrong–I adore cooking, but the break has been nice. After my post-baby visitor/helpers left, good friends and neighbors began bringing dinners for our new family of four. Last week we ate entirely by the love and service of others (and so far, this week has been the same:) Although I didn’t plan, or cook any of the following meals, I thought I’d share them as a good list of ideas for delicious, deliverable meals. Nary a tuna casserole among them:)
Monday: Chicken, pepper and onion tacos with corn tortillas, fresh guacamole, homemade salsa, tortilla chips and black beans. And rocket popsicles.
Tuesday: Homemade falafel with homemade pita, dill cucumbers, yogurt, lettuce and tomato. And chocolate Gelato.
Wednesday: Papa Johns Veggie Pizza (ordered delivery for us:)
Thursday: Beef and corn tacos with flour tortillas, lettuce, tomato, cheese, and salsa. And strawberry short cake.
Friday: Italian Crock Pot Chicken, with egg noodles and caesar salad. And chocolate brownies.
Saturday: Sweet and Spicy Meatballs(*recipe below!), rice, peppers and fresh pineapple. And fresh watermelon.
Sunday: Hmm. Leftovers. Delicious and deliciously easy:)
*Sweet and Spicy Meatballs

Meatballs
1-1 1/2 pounds of ground beef (ground turkey works too)
3/4 cups rolled oats
2 eggs
1/4 cup finely chopped onion
1 tsp salt
pepper to taste
1 tsp Worchestershire sauceCombine all ingredients. Mix well. Form into balls. Place in casserole dish. Cover with sauce. Bake at 350 for about 30 minutes. Serve with rice, fresh pineapple, and sweet peppers.Sauce
1 cup brown sugar
1/2 cup vinegar
2 tsp mustard
1/2 cup bbq sauce
2 tsp Worchestershire sauceCombine all ingredients in saucepan and blend thoroughly. Heat and pour over meatballs before baking.
