Last week was another different one for us, because Dave’s mom was in town helping with Eliot (okay, helping with Milo while I took care of Eliot:) We began the week with a loose meal plan, bought the ingredients, cooked a few days…then got take out and ate out a few days. Hey, that’s part of having parent’s come visit, right?!
The meals we did make were great, though. Especially that pictured above, our Tuesday meal: Pesto fusilli with artichoke hearts, sun dried tomatoes and grilled salmon. Mmm. So good and sooo easy. Hope you get some inspiration for your menus.
Monday: Holly’s summer pasta salad (a fantastic meal brought to us by a good friend. I need to get the recipe, then I’ll share)
Tuesday: Pesto fusilli with artichoke hearts, sun dried tomatoes and grilled salmon. This simple basil pesto is so easy, then just toss with the cooked pasta and cut up artichoke hearts and sun dried tomatoes and you’re set! We always grill salmon simply with fresh ground salt and pepper, a little butter and a squeeze of lemon. Delicious.
Wednesday: Afghan food from Afghan Kabob. Yum.
Thursday: Pulled pork burritos. Melanie does pork so well, so this one was all her. I have no idea how it turned from a hunk of raw pork loin into a tender, fall-apart-at-the-touch-of-a-fork meat, but it did.
Friday: Shake Shack. Hmm, I don’t know how this one happened. One minute we were all set to make homemade margarita pizza…the next we were downing burgers, fries, chocolate malts, fresh lemonade and salted caramel custard. Weird.
Saturday: Steaks, Grilled Chicken and Chop Salad at Aunt Missy’s. We never pass up a chance to spend time with family, eating fantastic food. Jay and Missy do simple, fresh, perfectly grilled food every time!
Sunday: Trader Joe’s Green Curry Tuna over rice. Oh, left to fend for ourselves, again! How quickly I am spoiled by the help:) Lucky for me TJ’s always comes through in a pinch.
This current week has been another rest from cooking for me. It’s been my first week with just my own two hands and my two little men, so my friends and neighbors from church are providing meals every night. They have all been great, and I’ll share them next week. I’ve gotten some good ideas for make-ahead meals to deliver!
