I’ll be honest. Our meals at home last week were okay (our meals out, however were fantastic!!).
Again, at home…just okay– which is disappointing for a food lover like myself. That said, I was thinking a lot more about having a baby than eating well and I think I got a little lazy. It’s funny how, even though the baby has not arrived yet, I’ve been a lot less anxious this week. I guess I have accepted that he won’t surprise me with being early:)
At any rate, this run-down might offer some inspiration to someone so here they are:
Monday: SHAKE SHACK!! The best burger experience in DC, so far for me. My only regret is getting a concrete custard instead of a chocolate malt…but that situation has been rectified, don’t you worry;)
Tuesday: Haystack Pasta (Just the left-over sauce from last week heated and poured over penne. Like a chicken stroganoff. I also sauteed some fresh mushrooms to add to the sauce, and that was a good idea. Dave loved it, I thought it was so so. But hey, it was leftovers!!)
Wednesday: Beef Tacos with Avocado Pico de Gallo. Delicious, but eaten in the car on the way back from a midwife appointment. Not the ideal setting for tacos, you know?
Thursday: Roasted Veggie Hummus Wraps (Summer squash, zucchini, red onion and tomato, all grilled with olive oil, salt and pepper, wrapped with a smear of homemade hummus into a tortilla. Bam!) I think either a little less char or a little more salt would have made this one more satisfying for me. It’s sub-par-ness was definitely user error.
Friday: Homemade Hawaiian Pizza with Rosemary Ham and Fresh Pineapple. Okay, this was awesome. I’ll continue to post the dough recipe, because it is the bomb (remember that I add about a teaspoon of oregano, garlic and parmesan to it…) The rosemary ham from Trader Joe’s added a fun sophisticated taste to this meal that I adored. Yum.
Saturday: CAFE RIO!! Pork salad, black beans, shredded lettuce, everything on top with creamy tomatillo dressing. Mmmm. Like eating straight back into Jr. High (when Cafe Rio hit the St. George strip…) It is worth the 45 minute drive from DC, and I did get a burrito to go that is now in the freezer waiting to accompany me to the hospital and be devoured in my post-partum, animal-like ravenousness.
Sunday: Crock Pot Sweet and Sour Chicken. This was the winner of the homemade meals last week. I tend to distrust slow cooker recipes, so when one wows me, it goes on my repeat list. My variations to the recipe included: using pineapple juice from a can of sweet pineapple chunks instead of water, using chicken thighs instead of breasts, adding 1/2 of a red onion, 1/2 yellow and 1/2 orange bell peppers, cubed. I didn’t have soy sauce, so I just used salt to taste. And, boy, it was delicious.
