Redneck Recipe: French Fried Fritatta

I might be a redneck if…I used leftover cajun fries from Five Guys to make a Frittata for my family. Yep. Guilty!
I really do come from some awesome redneck roots. I’ve heard stories of how my great-grandmother raised catfish in a tub on the back porch to eat for dinner! And, I really think I might have been taught as a child to wipe my nose on my sleeve! (my dad will say he had nothing to do with that, and my mom will just laugh:)
So, the other night, when Eliot was craving burgers and fries, we hit up Five Guys. I made the fortuitous mistake of ordering the Large Fries, which is basically a brown bag filled with fries and then a little cup of them on the top. We’re talking huge amounts of cajun goodness. Try as we might, Dave and I only made it through about half of them. Rather than toss the rest, we packed them home…after all, the potatoes were from Rexburg, ID  that day, and these are hard economic times!
So, what to do with a pile of cold, semi-soggy, cajun potatoes two days later? Inspiration hit, and I began whipping up a french fried frittata.
I chopped the fries up a bit and sauteed them in a dash of olive oil with half a diced onion.
Then I whisked five eggs in a bowl…
…added the sauteed veggies, and stirred a bit. The cajun has nice and strong enough spice for the frittata. Had they been regular fries, I would’ve seasoned with salt and pepper at this point.
I added about one and a half tablespoons of oil to the pan, turned to medium heat, and poured the mixture in. After about 8-10 minutes I could see the sides were cooked, and the middle was just slightly jiggly. I checked the bottom with a spatula, and sure enough it was browned.
Maybe the trickiest part was flipping the frittata onto a plate, then sliding it gently back into the pan, but it went very well. No breakage! After about 3-4 more minutes it was all cooked up and ready to eat…again;)
Topped with some fresh tomatoes, parmesan, and black pepper, then paired with a simple spring greens salad, you almost forget the redneck origins of the meal! And boy was it good!  
So, go ahead…order the Large;)
