Nothing is better than a summer picnic at the park. This week Milo and I picked Dave up from work and headed straight over to Belle Haven Marina to enjoy an early dinner near the water. For the meal I had put together a simple pesto, tomato, artichoke pasta salad, to be mixed with fresh arugula on site. It ended up fantastic. And with a crusty asiago baguette? Mmmmm. Laid back as the evening was, I forgot the camera. Thank goodness for the 1.3 mpx baby on my Razr (yes, we may be the only people in america without iphones…)!!
This kid loved the food, but loved the sticks even more…

Picnic at the Park Pasta Salad
1 lb box of Ziti, cooked to al dente
1/4 cup sun dried tomatoes, diced
1 large roma tomato, diced
1 can artichoke hearts in water
1/2 bag fresh arugula
Mix first 5 ingredients together in a large bowl. Stir in the arugula just before serving. Add fresh salt and pepper to taste.
