This year we were a little more traditional than last year! Just a plain ‘ole four-leaf clover…green of course. Shape and color aside, the pancake itself tasted awesome. I used a new recipe from my favorite cookbook:
**Not So**Basic Pancakes
(Adapted from Mark Bittman)
2 cups all purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 Tablespoon sugar
1 egg
2 cups milk
2 Tablespoons melted and cooled butter
**then I added
1 Tablespoon lemon juice
1 cup chopped fresh or frozen strawberries
Mix together dry ingredients. Mix wet ingredients separately, then mix into dry. Fold in lemon juice and strawberries. Melt a teaspoon or so of butter onto a griddle at medium heat. Ladle batter onto griddle and let cook until bubbles hold their shape in the batter, about 2-3 minutes. Flip and cook another 2-3 minutes. Enjoy!

We’ve been pretty chill about St. Patty’s…in fact, at breakfast I asked Dave “So, what is it we’re celebrating today, anyway?” He said it was Saint Patrick chasing all of the snakes out of Ireland. Hmm. Seems like a good enough reason to eat colorful food, right?
