The Backstory
Six years ago I had the idea to start eating the same basic meals over and over again to save time, energy, and money. I was consistently overwhelmed by the idea of coming up with new meals every night for a family of young kids who barely wanted to eat anything anyway! The witching hour was also dinnertime, and it felt like a lot of pressure to be creative day after day.
As I considered the way people eat around the world, I realized that here in America, we hold ourselves to an unrealistic standard of variety and novelty. So, I involved my family in choosing simple, nutritious meals that we all enjoyed, and put them on repeat.
The Course
As the years have gone by, I have continued to use the minimal meal plan, and have shared about it on the blog and on my podcast. So many moms have reached out to tell me what a difference it has made in their lives to simplify and invite ease back into dinnertime.
Some even suggested I formalize the idea into more of a step-by-step process that families could follow to design and personalize their own minimal meal plan. And, now I have!
